St. Jerome and the Lion Cupcakes


At the end of each September, I love turning our leftover Michaelmas Cupcakes into the face of a lion for the kids to enjoy while we read the legend of St. Jerome and the Lion. You can find many options for today's feast listed in our September Book Basket over at Shower of Roses.

I shared this idea here in the archives many years ago but my children all agree that our newer lions look so much better. Here are some pictures from recent years!

Cupcake Forest for the Feast of St. John Gualbert


ST. JOHN GUALBERT 
Patron of Foresters, Forest Workers, Park Rangers and Parks
Feast Day - July 12

St. John Gualbert was born at Florence, A. D. 999. Following the profession of arms at that troubled period, he became involved in a blood-feud with a near relative. One Good Friday, as he was riding into Florence accompanied by armed men, he encountered his enemy in a place where neither could avoid the other. John would have slain him; but his adversary, who was totally unprepared to fight, fell upon his knees with his arms stretched out in the form of a cross, and implored him, for the sake of Our Lord's holy Passion, to spare his life. St. John said to his enemy, "I cannot refuse what you ask in Christ's name. I grant you your life, and I give you my friendship. Pray that God may forgive me my sin." Grace triumphed. A humble and changed man, he entered the Church of St. Miniato, which was near; and whilst he prayed, the figure of our crucified Lord, before which he was kneeling, bowed its head toward him as if to ratify his pardon. Abandoning the world, he gave himself up to prayer and penance in the Benedictine Order. Later he was led to found the congregation called of Vallombrosa, from the shady valley a few miles from Florence, where he established his first monastery. Once the enemies of the Saint came to his convent of St. Salvi, plundered it, and set fire to it, and having treated the monks with ignominy, beat them and wounded them. St. John rejoiced. "Now," he said, "you are true monks. Would that I myself had had the honor of being with you when the soldiers came, that I might have had a share in the glory of your crowns! " He fought manfully against simony, and in many ways promoted the interest of the Faith in Italy. After a life of great austerity, he died whilst the angels were singing round his bed, July 11, 1073.

These forest/tree cupcakes were so easy to decorate with some melted green and cocoa candy melts and a couple plastic bags with the corner cut off to squeeze the melted candy onto the wax paper. After the candy trees had hardened we simply placed them on the cupcakes.

Variations of my Deer in the Woods" Birthday Cake and Snowy Mountain Ski Resort Birthday Cake over at Shower of Roses would also be fun for this patron saint of foresters, forest workers, park rangers and parks!

Sacred Heart Cupcakes


Happy Solemnity of the Most Sacred Heart of Jesus! 



Using Wilton Heart Silicone Baking Cups for the Sacred and Immaculate Hearts simply fill and bake with your favorite cupcake batter. We used the red baking cups for the Sacred Heart Cupcake and the pink baking cups for the Immaculate Heart Cupcakes (not pictured). 

 
 

Cover each cupcake with white frosting, add a red heart to the center of each cookie with red frosting, using additional yellow or orange frosting to create a flame, then add chocolate sprinkles to represent the thorns across the center.

Watchmaker Cake with Cameo in Lace Candy

Happy Feast of Sts. Louis and Zelie Martin! Here is a variation on the French Vanilla Cake and Cupcakes in Honor of the Watchmaker and Lace Maker found in the archives that I shared over at Shower of Roses last year. We used the rest of the cupcake batter to make a Cupcake Forest in honor of St. John Gualbert whose feast day is also celebrated today!

St. Anthony's Sermon to the Fishes Cupcakes


I thought I shared these cupcakes a couple years ago, but it looks like I only posted them over at Shower of Roses along with a few other ideas for the feast of St. Anthony. I'm planning to make them again today for the children to enjoy after we read St. Anthony's Sermon to the Fishes by Abraham a Sancta-Clara, an Augustinian monk who lived from 1607–1680. You can find the poem here

 
These cupcakes are so quick and easy to decorate. I simply used some Fluffy White frosting and created little peaks on the top of each cupcake so the fish and other sea creatures (I used Scandinavian Swimmers from Trader Joe's) could peak out of the whitewater to listen to St. Anthony's Sermon!

They are a great (and artificial dye free) alternative to the "A Multitude of Fish Cupcakes"

St. Andrew the Apostle Cupcakes


The feast of St. Andrew the Apostle is celebrated on November 30th. The beginning of Advent is alway determined by St. Andrew’s Day. The Sunday nearest to his feast is always the First Sunday in Advent. If November 30th falls on a Monday through Wednesday, Advent begins the Sunday preceding; if it falls on Thursday through Saturday Advent begins the Sunday following.


The feast of St. Andrew is also a nameday day in our home so we usually celebrate with a special dessert. Last year (you can see all the pictures over at Shower of Roses) I made these simple cupcakes using chocolate cupcakes, a can fluffy marshmallow frosting, Trader Joe's Honey Wheat Pretzel Sticks, and Fudge Brownie Goldfish Grahams.

Saint Andrew is said to have been put to death by the Roman authorities on an X-shaped cross. After frosting each cupcake, I simply stuck two pretzels into each cupcake at an angle to create an X shaped cross. I then added a few fish grahams to the base of each cross, symbolizing that St. Andrew was a fisherman, like his brother Peter.  I'm hoping to make them again this year!

Epiphany of the Lord

Epiphany Cupcakes from last year's celebration!

The Solemnity of the Epiphany is celebrated either on January 6 or, according to the decision of the episcopal conference, on the Sunday between January 2 and January 8. (source)

The word Epiphany means “manifestation.” As such, the object of the Church on this feast is not only to commemorate the historical arrival of the Magi with their gifts for the new-born King, but moreover to adore the same Christ Who continues to reveal Himself to us today.

It is an ancient custom to bless the home on Epiphany followed by a festive meal. The current year and the legendary initials of the three Magi (Caspar, Melchior, Balthasar) are marked above the outside doorway with blessed chalk; crosses are placed between the initials and year: 20+C+M+B+17. The initials C-M-B are also interpreted as the Latin phrase “Christus Mansionem Benedicat” which means “Christ bless this home!”

St. Francis of Assisi Tonture Cupcakes

(Tonsure: Latin tondere, "to shear") 

Tonture is the custom of shaving part (or all) of the hair of the head, derived from monastic observance in the fourth and fifth centuries. Shaving the whole head or leaving an outside ring of hair on scalp (representing a crown of thorns) became common for clerics in the sixth and seventh centuries.  Though used by many early religious orders, most associate this hair style with the Franciscans, especially St. Francis.  The idea of cakes and other treats that resembled a ring tonture have been posted here at Catholic Cuisine in the past for St. Francis feast day, October 4.

This is another variation idea made with cupcakes and is very easy and quick to pull together. Make cupcakes as directed using a yellow or white cake. Pipe chocolate frosting around outer edge of each cupcake to form a tonture. The raised nature and the ability to make it look curly or wavy add to the appearance as hair and is set apart from the lighter color of the cupcake.

Serve for the feast of St. Francis or one of the other typically tontured saints.

Angel Food Cupcakes with Blackberry Buttercream Frosting


Angel food cakes or cupcakes are always a good go-to option for the feast of the Archangels (September 29) or the Feast of the Guardian Angels the following week (October 2). This recipe which includes a buttercream frosting flavored with blackberry puree makes the treat an especially fitting one for the feast of the Archangels.  The blackberry addition recalls the legend of the blackberries associated with St. Michael's feast day.

Jessica has posted in the past about her wise and thrifty idea for making a batch of cupcakes and using a portion for one feast day and the other portion(s) for saint's days that follow closely after.  I do something similar by only baking half a batch. A typical cake mix makes 24 cupcakes but if you only make half at a time then you have 12 cupcakes which is usually more reasonable for a family dessert for one day. I just measure out half of the cake mix and add half of the additional ingredients. Some recipes call for 3 eggs and those are good boxes to make in 1/3 batches (8 cupcakes). Anyway, with angel food cake mixes, the only other ingredient is water so it is very easy to split the mix and add half the water. Continue to make batter as directed. Scoop batter into lined cupcake tin and bake at 350 degrees for about 15-20 minutes, until top is dark golden and any cracks feel dry and not sticky.  Cool and frost with buttercream frosting.

For the buttercream frosting:
1/2 stick butter, softened
3 ounces fresh blackberries, pureed and strained
2-2 1/2 cups powdered sugar
food coloring, if desired

Cream butter with an electric mixer until fluffy. Add blackberry puree and mix until combined. Add powdered sugar 1/2 cup at a time until frosting reaches desired consistency. The puree makes the frosting a pretty pink so if you want it more purple add a little blue food coloring and mix until blended to a solid color. Pipe or spread onto cooled cupcakes. Frosts approximately 12 cupcakes. Add blackberry to top if desired.

Chai Cupcakes for Mother Teresa's Canonization


Chai Cupcakes topped with Vanilla Buttercream and sprinkles... Our girls tested the recipe last Sunday and they'll be making them again this weekend for the canonization of Mother Teresa!

Chai Cupcakes
(recipe: How Sweet It Is)

Ingredients:
  • 1 1/2 cups sifted all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon freshly ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 large egg + 1 egg white
  • 3 tablespoons vegetable oil
  • 3 teaspoons vanilla extract
  • 1/3 to 1/2 cup whole milk

Directions:

Preheat the oven to 350˚ F. Line a muffin tin with cupcake liners.

In a small bowl, whisk together the flour, baking powder, spices and salt. Set it aside.

Add the butter to the bowl of an electric mixer and beat it until creamy. Add the sugar and beat with the butter on high speed until fluffy, 2 to 3 minutes. Add in the eggs one at a time, mixing well on medium speed until combined. Scrape down the sides of the bowl if needed. Add in the oil and vanilla extract, beating on medium speed for another minute. With the mixer on low speed, add in half of the dry ingredients. Pour in the milk. Add in the other half of the dry ingredients and mix them on medium speed until the batter is combined.

Fill the cupcake liners about 3/4 of the way full. Bake until the tops are set, about 16 to 17 minutes. Let cool completely before frosting.


How Sweet It Is shares a recipe for Brown Butter Chai Icing, but this was the first time my girls had made buttercream on their own so they decided to make a simple Vanilla Buttercream Frosting and sprinkle additional Chai Spice mixture on top.

Vanilla Buttercream with Chai Spice Sprinkles

Ingredients: 
  • 1 cup (2 sticks) butter, softened
  • 3 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk

Directions:

In a bowl combine butter, sugar and salt. Beat till blended.

Add the milk and vanilla and beat for an additional 3 to 5 minutes or until smooth and creamy.

For the sprinkles: Combine 1/4 teaspoon ground ginger, 1/4 teaspoon cinnamon, 1/4 teaspoon ground cardamom, and 1/4 teaspoon ground allspice. Sprinkle on top of frosted cupcakes.

Saint Germaine and the Sheep


Last week I baked a batch of twenty-four yellow cupcakes. I decorated the first eight for the feast of St. Columba, eight more for the feast of St. Anthony, and this afternoon I decided to decorate the last remaining eight as sheep to go along with the story Saint Germaine and the Sheep for today's feast of St. Germaine Cousin who was a shepherdess nearly from infancy. Originally I thought I would use miniature marshmallows, similar to our Good Shepherd Cupcakes, but we're out and I didn't want to make a trip to the store so I improvised with the last of the frosting and a round decorating tip. They turned out so cute! 

Saint Germaine's Flock of Sheep Cupcakes

Supplies: 
Yellow Cupcakes
Fluffy White Whipped Frosting
Large Marshmallows


Unwrap each cupcake and frost top with Fluffy White Whipped Frosting. 


Cut the marshmallows to create face and ears for on top of each cupcakes. 

For the face: Cup marshmallow in half across the middle. Use one half for each cupcake. 

For the ears: Cut marshmallow diagonally from corner to corner. Cut one half of the marshmallow again, down the middle, to create two ears for each cupcake. 


Place the marshmallow face and ears on top of the frosted cupcake, sticky side up. 


Add two eyes and a heart shaped nose to each cupcake. 


Using a round decorating tip, pipe dots of frosting around the face and ears, covering the top of the cupcake to create a fluffy sheep.

Holy Spirit Cupcakes for Pentecost


Decorate cupcakes with red sprinkles and white chocolate doves for a simple and symbolic Pentecost dessert! I packed along these cupcakes to share at our Homeschool Family Camp last year.


Candy molds are easy to use and can be purchased inexpensively online. Other options include these Pentecost Cupcakes made with dove cupcake picks from the wedding section of the craft store and these beautiful Flaming Cupcakes for Pentecost

Saints Louis & Zélie Martin :: French Vanilla Cake and Cupcakes in Honor of the Watchmaker and Lace Maker

I spent yesterday afternoon creating a few treats to celebrate today's canonization of Louis and Zélie Martin, the parents of St. Thérèse.  I didn't really have a plan when I pulled out a box of French Vanilla cake mix from the cupboard, but was so happy with how it all came together!



I started by making "lace" mini cupcake wrappers using some 8" Doilies I had with my craft supplies. These were so easy to make and really turned out beautifully! If you have larger doilies you could make larger wrappers for full size cupcakes. 


While I was assembling the cupcake wrappers, I baked 24 mini French Vanilla cupcakes, saving the remaining batter for a small 8" round cake



Once the mini-cupcakes had cooled I topped them with some homemade buttercream frosting:

1 cup butter, 3 1/2 cups powdered sugar, 1 tsp vanilla, 1 tsp milk, 1/8 tsp salt
Whip until smooth.


At first I thought I would decorate the 8" cake as a clock face, but after placing the cake on the platter I decided to surround it with twelve of the mini cupcakes. I added Roman Numerals and clock hands using Black Decorating Icing. I probably would have opted for melted chocolate if I had any dark chocolate candy melts in my stash.


I also made some Saint Zélie Martin Cameo in Lace Candy. These little candies would work great as cupcake toppers!
