A Simple and Sweet Treat for the Feast of St. Cecilia



St. Cecilia, whose feast is celebrated on November 22, was named the patroness of music because “While the profane music of her wedding was heard, Cecilia was singing in her heart a hymn of love for Jesus, her true spouse.” She is often represented in art with an organ or organ pipes in her hands. In honor of her feast you can easily create “St. Cecilia’s Heavenly Music Candy Bar” using Kit Kats!

Unwrap the KitKats and aassemble the candy on a serving dish to resemble an organ keyboard.  Enjoy!

Heavenly Garden Apple Rose Pastries


My girls and I enjoyed baking Apple Roses in preparation for the feast of St. Thérèse!  There are many variations of Apple Roses that can be found online, including pies, tarts, cakes and more, but we decided to use the puff pastry sheet we had in the freezer to make the following Apple Rose Pastries.  Happy Feast of St. Thérèse! 


Heavenly Garden Apple Rose Pastries

Ingredients:
  • 1 Puff Pastry Sheet 
  • 3 Apples - I used a combination of Fuji and Pink Lady
  • 5 Tablespoons Sugar
  • 2 teaspoons Cinnamon
  • 1 pinch Nutmeg
  • 1 teaspoon Lemon Zest
  • 4 cups Water
  • 3 Tablespoons sugar
  • 2 Tablespoons lemon juice
  • Powdered Sugar for dusting (optional)
  • Parchment Paper

Directions:



Wash and core the apples. Slice in very thin slices, slightly smaller than 1/8 inch.  Place the sliced apples in a saucepan along with the 4 cups water, 3 tablespoons sugar and 2 tablespoons lemon juice. Bring to a boil and let simmer for 2 minutes, or until the apple slices soften and can easily bend. 



Strain the apples and let cool in the colander.  Line a plate with paper towels and nicely arrange the apple slices so that they can dry and cool completely.


While the apples are cooling, mix the 5 tablespoons of sugar with the cinnamon, nutmeg and lemon zest.  Prepare you work surface by lightly sprinkling it with some flour (or just use a silicone mat) and unfold the sheet of puff pastry (it is easiest to work with if it is not completely thawed).  Using a pastry (or pizza) cutter, cut long strips approximately 1/2 inch wide.  Spread the cinnamon mixture over the dough and slightly press it down.


By this time your apples should be cool and almost dry.  Take a few slices and place them on the first strip of pastry dough, overlapping them so they do not fall out and will create a rose-like design (petals) once completed.  Now start rolling, making sure it is fairly tightly rolled.  Place on a baking sheet covered with parchment paper.


Repeat until you have create all of the Apple Roses.


Bake at 425˚F for 25 minutes, or until nicely golden.


Dust with powdered sugar if desired.

The Flowers of Wreath III Cupcakes


"Little Flowers Girls' Club® is a Catholic program for girls ages 5 and up based on learning Catholic virtues through the lives of Catholic saints, Scripture and the Catechism of the Catholic Church. Developed by a Catholic mom of nine, Rachel Watkins, and based on Fr. Lasance's Catholic Girls' Guide, the Club strives to bring the Catholic faith alive and inspire the girls to become authentic Catholic women..." Read more here.

For the past three years I have been leading a Little Flowers Girls' Club, a  for my girls and some of their friends.  It has been such a rewarding experience and my girls have absolutley loved being Little Flowers.

In addition to the suggestions in the Leader's Manuals, I started creating a series of Notebook Pages to go along with each virtue/saint, and also have really enjoyed coming up with snacks (or "Catholic Cuisine!") that  tied in the Saint and/or Flower for each meeting.

This past year, for Wreath III, I ended up sticking with a flower theme, and was able to come up with a cupcake for each of the 9 meetings.   Sometimes I would have all the supplies ready for the girls to decorate their own cupcakes (which the girls loved) and other times I had the cupcakes pre-decorated.  I've posted about them in my individual posts about each meeting, but I thought I would consolidate them all into one post as well, to share with you all here.  Now to finish up my plans for this coming year, including "Saintly Symbols Cupcakes for Wreath IV" before our first meeting later this month!

Meeting One :: Mary & Martha,  Eutrapelia, Dandelion

Meeting Two :: Ruth & Naomi, Friendliness, Morning Glory

Meeting Three :: St. Margaret of Scotland, Initiative, Black Eyed Susan

Orange Muffins topped with Cream Cheese Frosting, to be decorated by the Little Flowers with homemade Black Eyed Susan Chocolates (using this candy mold and candy melts) and the options of green mint meltaways, green color mist and/or green glitter gel.


Meeting Four :: St. Zita or Proverbs 31 Woman, Orderliness, Cranberry


To make these delicious cupcakes, I used a package of Yellow Cake Mix, replacing the water with Orange Juice and added 1 cup of frozen cranberries and 1 cup of white chocolate chips.  We topped them with some Cream Cheese Frosting, homemade Sugared Cranberries (Craisins would be a simple alternative), and served them with Sparkling Cranberry Juice.  


Meeting Five :: St. Felicity and Her Seven Sons, Self-Control, Amaryllis


I started with Pink Cupcakes, with the help of a Strawberry Cake Mix, topped with Frosting.  Using this Lily Mold I then topped the cupcakes with Pink (the color for this virtue) Amaryllis Flowers (the flower for this virtue) homemade with Pink and Yellow Candy Melts.  



Meeting Six :: St. Anne, Mother of the Blessed Mother, Responsibility, Mum


These cupcakes were inspired by a recipe in What's New, Cupcake?: Ingeniously Simple Designs for Every Occasion.   They would be great to make this coming weekend for Mother's Day, anytime this month for our Blessed Mother during her month of May, or in July for the feast of St. Anne.  You can find the directions in the archives!


Meeting Seven :: St. Bathildis, Patience, Lily of the Valley

Meeting Eight :: Mary Mother of God, Cheerfulness, Blue Phlox

I wasn't sure how I was going to decorate the cupcakes this month. . . After looking at various images online of Blue Phlox Flowers I ended up making a little bit of blue frosting.  Using a round frosting tip, I put five drops (my kids said they looked like hershey kisses) on each cupcake, then, using the tip of a knife, I pulled the frosting drops towards the center, creating the flowers.   I am a total amateur at this sort of thing, but I thought they turned out nicely!

The Blue is for Our Blessed Mother and the Five Petals represent the five dimensions of Cheerfulness:  Marian, Courageous, Heroic, Consistent, and Contagious.


Meeting Nine :: St. Julie Billiart, Fortitude, Hyacinth

When I was looking for ideas, Charlotte mentioned that Pink Popcorn came to mind.  I thought that was a perfect idea, but since I didn't have all the ingredients I opted to make the pink hyacinths using some pink Smooth & Melty Petite Mints (I had purchased a few bags at 75% off in January from Hickory Farms and had one left) along with a little green frosting for the leaves.  I also sprayed the white base frosting with a little green, before adding the candies.  I thought they turned out cute, and they were very yummy despite the fact that my six year old pointed out that "the chocolate cake even looks like dirt!"

St. Maria Goretti's Flames of Forgiveness Cupcakes


Today, July 6th, is the feast of St. Maria Goretti!  We have a bunch of friends coming over for some Saintly Summer Fun to honor this beautiful saint, who was a "Martyr for Purity."

As I was trying to come up with a snack for the children I decided to focus on tying in the lily, the symbol for St. Maria, and the vision Alessandro had of Maria, leading to his conversion: 

"While in prison for his crime, Alessandro had a vision of Maria. He saw a garden where a young girl, dressed in white, gathered lilies. She smiled, came near him, and encouraged him to accept an armful of the lilies. As he took them, each lily transformed into a still white flame. Maria then disappeared. This vision of Maria led to Alessandro’s conversion, and he later testified at her cause for beatification." ~ SQPN

Supplies:

Lily Lollipops - St. Maria is often pictured with an armful of Lilies, which symbolize purity.  You can purchase the mold here.

Mini Marshmallows - 7 for each cupcake, cut at a diagonal to create 14 flames. These represent the 14 lilies that St. Maria offered Alessandro in a vision, one for each of the 14 times she was stabbed in the heart, which then transformed into 14 still white flames.

Red Cupcake Liners with White Cupcakes and Frosting - Symbolizing the fact that St. Maria was a Martyr (red) for Purity (white).

A Marian Titles May Crowning Luncheon


Inspired by Charlotte's May Crowning Feast, I decided to host a Marian Titles May Crowning Luncheon following our May Little Flowers Meeting, which was based on Mary Mother of God and the virtue of Cheerfulness.   Each of the girls in our Little Flowers group selected one of the menu items to bring and I filled in the gaps.  We had one of our wonderful priests join us for the afternoon! He gave a talk to the girls on Our Lady and the virtue of Cheerfulness, taught them a Marian hymn, led a Marian procession, and then we all prayed the Litany of Loreto before enjoying our feast.   It was a lovely afternoon! 

~ Queen of Martyrs ~

One of the girls brought a Strawberry Boston Cream Cake, Charlotte's suggestion for Queen of Martyr's since her son pointed out that "The red is for the martyrs and the strawberries make it look like a crown."  It was a hit!

~ Holy Mary (Sancta Maria) ~ 

I picked up a couple packages of Marias cookies for Sancta Maria (Holy Mary) and served them with Nutella.  

~ Mystical Rose ~

I made these Strawberry Rose Cupcakes in honor of the Marian title Mystical Rose, saving the rest of the batter to make our Blue Phlox Cupcakes (the flower of the month for Little Flowers). 

I had a number of candy molds in my cupboard that tied in with some of the Marian Titles, so I couldn't resist making a few batches to add to our table   These Rose Candies were made with this mold and a mix of Red and White Candy Melts. 

~ Blue Phlox Cupcakes ~ 

Though not based on one of the titles of Mary, theses cupcakes were topped with Blue Phlox Flowers for our study of Our Lady and the virtue of Cheerfulness.  The Blue is for Mary and the five petals represent five dimensions of Cheerfulness:  Marian, Courageous, Heroic, Consistent, and Contagious.

~ Mother Most Pure ~ 

I made these Mother Most Pure Lily Lollipops made with this mold, though it doesn't look like I took a picture after adding the second batch...

I had a feeling that no one would sign up for our Lily Sandwiches and sure enough I was the one to make them.  They really aren't as difficult as they look. . . I ran out of time and only had 30 20 minutes to make them before the girls started arriving.   I was able to pull it off!  :)  I made a couple modifications to our regular recipe, flattening the bread with a rolling pin after cutting it out (which really helped!) and then inserting swizzle sticks for stems (inspired by Charlotte).  I am so glad I had a chance to make them and they didn't last long!

~ Morning Star ~

These Star Shaped Tea Sandwiches were made by my friend Kathleen and her daughter.

~ Mirror of Justice ~

I happened to have a mirror from our old hutch, which came in handy for these Mirror of Justice Chicken Salad Sandwiches, brought by Amy's girls. 

~ Tower of Ivory, House of Gold ~ 

This was also inspired by Charlotte and also brought by Amy's girls. 

~ Health of the Sick ~

For this menu item, which was brought by Dee Dee, I opted for a Veggie Platter, though a plate of Apples would work nicely too!  

~ Vessel of Honor ~

Our punch bowl Vessel of Honor, was a wedding gift to my parents and passed on to us.   We used Charlotte's suggested recipe for Mary Blue Punch, mixing 7-up with a small box of blue gelatin (I wasn't able to find the unsweetened version) and topping it with vanilla ice cream clouds.  

Here is the document I created for the buffet signs.  I printed them out onto light blue card stock, adding a dark blue Fluer-di-lis quickly created with my Martha Stewart Fleur De Lis Punch.

O God, Who by the resurrection of Thy Son, our Lord Jesus Christ, hast vouchsafed to make glad the whole world, grant, we beseech Thee, that through the intercession of the Virgin Mary, His mother, we may attain the joys of eternal life, through the same Christ our Lord. Amen.
