Poor Man's Caviar

To celebrate today's Memorial of St. Vincent de Paul, patron saint of the poor (novus ordo calendar) I am going to make this delicious Poor Man's Caviar.

Poor Man's Caviar

Ingredients:
  • 1/2 onion, chopped
  • 1 green bell pepper, chopped
  • 1 bunch green onions, chopped
  • 2 jalapeno peppers, chopped
  • 1 tablespoon minced garlic
  • 1 pint cherry tomatoes, quartered
  • 1/4 cup olive oil
  • 1 (15 ounce) can black beans, drained
  • 1 (15 ounce) can black-eyed peas, drained
  • 1 bunch chopped, fresh cilantro
  • salt and pepper to taste
Directions:

In a large bowl, mix together onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes, olive oil, black beans, black-eyed peas and salt and pepper. Cover and chill in the refrigerator approximately 2 hours. Toss with desired amount of fresh cilantro to serve. Pin It

  1. I just made this at 11 am, chilled then ate for 12 noon but did leave out the J.Peppers and garlic. Ate it with Fresh Crusted Portugese mini loaf of bread ! What a scrumptious meal! Thanks for sharing.....

  2. I just made this for lunch. I left out the J peppers and garlic but it was delish all the same. Had it with homemade mini loaf of Portugese bread. Thanks for sharing with us.

  3. This is really good as a dip for tortilla chips... those little Tostitos ones that look kind of like crowns work really well w/ it. Yum! And great idea for St. VdP!
