I use Baker's Joy on the pan and then either flip it our quickly onto my hand and then onto a cooling rack or use a long thin metal spatula to help lift it up. It's a pretty firm little cake. Sometimes a little bit of the top skin will stick to my hand when I flip it, but since I always cover it with whipped cream, I don't worry about how that looks. Does that help at all?Charlotte (WaltzingM)https://www.blogger.com/profile/12690056082240865041noreply@blogger.comtag:blogger.com,1999:blog-7864168283064539221.post-23687899134951973912009-06-19T16:53:48.505-07:002009-06-19T16:53:48.505-07:00I have a weakness for cheesecake and this lemon on...I have a weakness for cheesecake and this lemon one sounds especially good. It is really clever, too - I wouldn't have thought of making a different shape. Can you help me though with info about how you get it out of the pan intact. I've never made a cheesecake without it being in a springform pan.Mary Machadohttps://www.blogger.com/profile/15546212539941937364noreply@blogger.com
